Step 1 - Choice of spices
Mandatory ingredients
As per law, the only mandatory ingredient for gin is the juniper berry. In addition, we consider that coriander seeds, orris root and angelica root are indispensable for a good gin !

Juniper berries
Piney, resinous, slightly sweet with hints of citrus and spice.

Coriander seeds
Citrus-like, nutty, with a slight spice and floral undertone.

Orris root
Earthy, woody, with subtle floral and violet notes.

Angelica root
Earthy, musky, slightly bitter with a celery-like flavor.
